Instructions:
Preheat oven to 400°F. Toss squash and tomatoes with olive oil, salt, pepper, and red pepper flakes. Spread on a baking sheet and roast for 20–25 minutes until caramelized. Meanwhile, cook pasta according to package instructions. Drain and return to the pot. Add roasted vegetables, parmesan, and basil. Toss well and serve warm.

A sweet-and-savory twist on the classic, this garden-inspired bruschetta pairs juicy strawberries with basil and mint on crispy toasted bread. It’s great as an appetizer or light summer snack.

Ingredients:

  • 1 cup strawberries, hulled and chopped
  • 1 tbsp honey
  • 1 tsp balsamic vinegar
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh mint, chopped
  • 1 French baguette, sliced and toasted
  • 4 oz goat cheese or whipped ricotta
